Transcript: Shallots are so easy to grow and they’re so lovely to eat. If you like growing garlic it’s the same exact life cycle planted in the fall harvested in summer. And friends, these French grays are exactly why shallots have the reputation they do. They have the highest sugar content of anything in the allium family so caramelize like a dream, and I can’t wait for you to try them.

They are much smaller than any other onion, any other shallot that you’ll see. But the flavor is unparalleled. And they’re very recognizable because they have a more rough and humble skin. They’re like kind of cream copper colored, and they’re like little apostrophes. I just adore them. And you eat them from midsummer to December. They don’t have nearly the storage capacity of other shallots. But that’s totally fine because I will eat all of these first. And, yes, I hope that you try them and you can save each from year to year the seeds being this they don’t produce true seeds they reproduce clonally but once you have these, you can simply save the largest bulbs every season, replant them and you’ll have them for years if not generations to come.
