Easy to grow and delightfully delectable, borage thrives in gardens as well as raised beds and containers, gently re-seeding herself in largely marvelous ways, quite unlike calendula who easily becomes a carpet. Your beneficial pollinators will be thrilled to forage in your borage from early July through frost here in Zone 5. At Fruition, we enjoy the young leaves shortly after the snows melt, before they become covered with hairs and quite fibrous. Once their star-shaped blossoms open, 80% cerulean blue with the balance coral pink, we pluck them for salads and cakes, their flavor reminiscent of cucumber. We sow borage in soil blocks about 4 weeks before final frost to transplant after frost.
