Organic Perfection Fennel
50 days to baby harvest, 80 days to full size harvest | Foeniculum vulgare
And indeed, she is!
Shaved in salads or thrown on the grill, it is not summer without Perfection in our gardens. We love the bulb but don’t just compost your greens: fennel’s sweet wispy greens we snip on salads and tuck in sushi; we also blend these fronds with garlic and herbs like basil and parsley in endless pesto-like sauces.
Though fennel prefers to grow in the cool of spring and fall, Perfection has more bolt-resistance than most. Nonetheless, spring and especially summer-sown fennel maturing into the shortening days and cooler temperatures of fall grow the sweetest, most tender bulbs. Transplant fennel for ease of cultivation; ample fertility and consistent water will yield good bulbs in any season.

Grow fennel for seed as you would for food and sow as early as possible. The first 10% that bolt be sure to harvest (and eat!) to ensure you’re not selecting for early bolting (which is significant for any crop, but especially fennel). Enjoy their beautiful flowers and harvest the seed once it turns brown and dry, readily falling off the bract on a warm, dry day. Dry further with fans for one week in a warm, protected place and use screens and fans to separate seed from chaff.
