    These Chioggia beets are wonderful. They germinate well and relatively quickly (unlike my slow starting golden beets). However, the real deal is the tenderness and flavor combination. I’m not a fan of a very strong beet flavor, and these pretty babies have just the right mix of mildness and earthiness to satisfy my palette. Also, my having left them in the ground much longer than I should have did not have a negative impact on them – they never became tough or woody. I will definitely be growing these beets again next season.

Organic Chioggia Guardsmark Beet

Planting Method: Direct Seed Only

When to sow: From 4 weeks before last frost until 8 weeks before first frost

Sowing and seedling care: For a continuous beet harvest, sow every 2-3 weeks. Sow 8-10 seeds per foot.

Seed Depth: 1/2 inch     Sun Needs: Full preferred (more sun = more abundance)

Days to Germination: 17 days at 55°F; 5 days at 75°F

Spacing after thinning: 3 inches; 12-18 inches between rows

Days to Harvest: 57

Harvest… and cook!: A roast beet salad, served cold and with plenty of fresh herbs, is one of our favorite summer snacks!
